All mortar and pestle sets look alike when viewed from a distance. But up
close and where it counts, they are anything but the same.
We address here applications in the kitchen, be it institutional or residential,
and the real issue is one of porosity and the fact that food material can be trapped
in pores (if present) which then become sites for bacterial growth. Agate, when
compared to porcelain, essentially has zero porosity where as porcelain has very
large pores. When using porcelain, the food material that is ground into the pores
can not readily be removed with any know protocol except
plasma ashing.
When agate is used, this source of bacterial and possibly pathogenic bacterial
contamination is eliminated since agate essentially has not porosity and therefore
there are no pores into which food material can be lodged. And therefore, there
are no organic residues left behind which can then become breeding grounds for
bacterial growth.
